Dad's GOOD Potatoes
My bride Jennifer often claims the food she could never live without is potatoes. She likes them any way she can get them. Her amazing rustic mashed red potatoes are filled with butter, cream and a lot of love. I often return the favor by cooking my take on a hearty au-gratin style potato dish that my kids and grandkids simply call "Dad's GOOD Potatoes".
Ingredients:
1 cup heavy cream
1 envelope onion soup mix
3-4 minced garlic cloves
2 Tablespoon Montreal Steak Seasoning
3 Tablespoons olive oil
1 1/2 cup grated cheese.
(I usually do a mix of Cheddar and Parmesan but any cheese will work)
5 lb. unpeeled potatoes washed & cut into wedges
(We prefer white or red but any potato will do)
Cooking Instructions:
Combine & mix all ingredients well in a big bowl.
Load into a greased 9x13 dish.
Cook covered for 40 minutes at 375°.
Remove foil off the top.
Sprinkle 1/2 cup cheese on top (optional).
Turn oven up to 425° and cook uncovered for 15 minutes
or until cheese is melted and top of potatoes get some color.
