Tom 's Creamy Caesar Dressing
You’ve probably heard by now that the famous Italian Caesar salad dressing was actually created in Mexico, and that’s true. Italian Immigrant Caesar Cardini had restaurants in San Diego & neighboring Tijuana, Mexico. His daughter Rosa claims her father created the famous dressing in his Tijuana restaurant during the US Prohibition years.
Also, Caesar’s original recipe did not include smashed anchovies and neither does mine, I have also replaced the classic raw eggs with creamier and safer mayonnaise. So, my take on the dressing is creamier, sweeter and lemon forward. Hope you enjoy this family favorite!
Tom’s Creamy Caesar Dressing: (2 cups)
1 cup mayonnaise
2 lemons- juice & zest
3 cloves garlic minced = 1 teaspoon
1/4 cup Parmesan Cheese (shredded)
1/4 cup olive oil
2 Tablespoons honey
1 Tablespoon Dijon mustard
1 Teaspoon Balsamic vinegar
1/2 Teaspoon black pepper
1/2 Teaspoon Worcestershire sauce
Blend all ingredients at high speed until smooth and emulsified, (30 - 60 seconds in our Bullet Smoothie Mixer)
